A BBQ Chicken Marinade Your Dad Will Envy

This grilled chicken marinade is so easy to make, super classic, and strikes the perfect balance of sweet and savory with a little kick of spice. It’s the kind of recipe that will impress all the men in your life and have them wondering when you became the grilling queen. Of course, this is also amazing baked. We’ve included some instructions on timing whether you choose to grill or bake your chicken.

Yields: It makes enough marinade for about 5-7 chicken breasts or 3 to 4 pounds of chicken pieces.

Instructions

  • We like to make it in a mason jar and shake it all together.

  • We then place the chicken breasts along with the marinade into a sealed ziplock bag.

  • Let it soak it for at least 30 minutes but ideally overnight.

  • When ready, remove from liquid and grill / bake.

TIP: reserve what’s left of the marinade and pour it / baste it over the chicken. OR, you can bring it to a simmer in a pan and use it as a sauce once it thickens.

Ingredients

1/2 cup extra virgin olive oil

1/2 cup balsamic vinegar

1/4 cup soy sauce

1/4 cup Worcestershire sauce

1/8 cup freshly squeezed lemon juice

3/4 cup maple syrup

2 tsp dried rosemary

2 tsp of cayenne pepper

2 tbsp Dijon

2 tsp salt

1 tsp ground black pepper

3 garlic cloves, minced

GRILLING

  1. Preheat grill to medium high heat.

  2. Once the grill is hot, remove your chicken from the marinade and place it on the grill. Close the lid.

  3. Reserve remaining marinade and use it baste chicken with a brush when you turn it over. If there’s any left over marinade, use it as a sauce when serving by reducing it on a low heat in a pan.

  4. Grill chicken for 5 to 6 minutes on each side. Remove the biggest piece and check that it’s cooked through if you’re not sure.

  5. Remove chicken from grill and lightly cover it with aluminum foil. Let chicken rest for at least 5 minutes. Garnish with more marinate and fresh herbs before serving.

BAKING

  • To bake, preheat the oven to 400F, and bake for 18 to 20 minutes. Baste as often as you can if you want extra flavor.
