Veggie Snack Bowl

We all get the munchies every now and again.  This Wellness Wednesday we are focusing on a healthy way to feed that afternoon craving in a nutritious and delicious way.   We love veggie bowls because they are so easy to make (5 mins max) and you can throw whatever you have in the fridge into it and it will usually stay scrumptious! The crunch is also one of our favorite things about these raw veggie bowls + you get just the right amount of full!  There is a ton of water in these vegetables so your skin will be super hydrated as well!  TipIf you want something more filling you can easily add some protein (beans, tuna, chicken etc) and make it a meal!  This is one flexible meal/snack! 

Ingredients

  • Shaved carrots
  • cucumbers
  • Red Pepper
  • Yellow Pepper
  • Avocado
  • Tomato
  • pine nuts
  • Pumpkin seeds
  • Olive oil
  • Lemon
  • Dijon Mustard
  • Salt and Pepper

Directions

  • Slice pepper into desired size.
  • Peel the carrots into ribbons
  • Slice avocado
  • slice tomato
  • Thinly slice the cucumbers 
  • Make salad dressing.

Lemon-Dijon vinaigrette:

Note: Play around with the ratios for desired taste but usually it’s about a 3-1 olive oil / lemon ratio with about a tbsp of dijon.

Pantothenic acid, or vitamin B-5, is another compound found in cucumbers that helps your skin retain moisture.
