A Hearty Breakfast

Who says your breakfast can’t be beautiful!  Well known as the ‘most important’ meal of the day,  we are adding ‘most fun’ to its list of accomplishments.  This one will keep you fueled and GLOWING.  We definitely had fun making heart shaped tomato slices.  Maybe even more fun eating this deliciously healthy and filling avocado toast with cucumbers, tomatoes, egg, and olive oil drizzled over everything!  

Ingredients

(Serves 1)

  • One avocado
  • One large vine ripened tomato
  • One perfectly hard boiled egg (see our blog post)
  • One slice of multi-grain organic bread toasted
  • Extra Virgin Olive oil (for a drizzle)
  • Pepper and Pink Himalayan Salt

Avocados/olive oil

Avocados contain a wide range of healthy minerals and vitamins. It has vitamins C, K and E, which are all good for your skin, and it offers certain antioxidant properties that are great for reducing inflammation.

Organic olive oil is rich in Vitamins A, E, D, E and K.

Tomato

Tomatoes contain all three high-powered antioxidants:beta-carotene (which has vitamin A activity in the body), vitamin E, and vitamin C.Most importantly they are the fruit thought to contain the highest concentrations of an important phytochemical called lycopene, which is an antioxidant and hence works as a sunscreen from within. Together these antioxidants make tomato an anti-aging product as they help in fighting cellular damage and reddening of skin.

A medium sized tomato can fulfill over 55 percent of required daily value of Vitamin C in a healthy adult, moreover it also fulfills over 20 percent of Vitamin A and over 10 percent of Vitamin K and other important minerals, dietery fibers and protein required by the body to maintain healthy skin

A match made in heaven

Foods work together in your body to perform their duties.  After all we all complex systems. That’s why having a healthy, DIVERSE diet that covers a variety of food groups is important (try not to eat the same thing all the time).  When tomatoes are eaten along with healthier fats, like avocado or olive oil, (which are both in this recipe) the body's absorption of the carotenoid phytochemicals in tomatoes can increase by two to 15 times, according to a study from Ohio State University.

BONUS: A Tomato Honey Mask for Clear Skin:

Due to its acidic nature, it can be used as an astringent to balance the skin ph level and thereby removing excess oil from the skin and aiding with acne.  It can also tighten your pores.  Mash up a tomato and add some honey to it (for moisturizing and antibacterial properties).  Then put it on a clean face for 15 minutes before washing it off!  Easy right?!
