Turkey Lettuce Bowls

As much as we love our salads there are times that you just need something more.  On days like this we like to make lettuce wraps which while having a salad component have a hot component as well.  We have developed several of these wraps with different fillings and this is one of the first ones we did.

Ingredients

Serves 2

  • 1 pound of ground turkey

  • 3 garlic cloves

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 head of iceberg lettuce

  • 1 medium jalapeno pepper

  • 1 avocado

  • Parsley

  • Avocado Oil

Directions

Put enough avocado oil in the pan to coat the bottom.  Finely mince garlic and jalapeno peppers (for less heat remove the seeds) and saute until the garlic is just translucent and fragrant.  Add the ground turkey and break up with a wooden spoon.  Stir frequently so as not to burn (there is very little fat in ground turkey).  When thoroughly cooked add frozen peas and corn.  Cook until just heated through.

Take the head of iceberg lettuce and smash on the counter-top root side down.  This will allow you to remove the core.  Carefully separate the leaves trying not to break them.

Cut the avocado in half and mash.

To prepare:  

Take one whole lettuce leaf and place on plate.  Fill with turkey mixture and top with avocado and parsley.
