It’s all about the crunch - salad
There is nothing we love more than salt, crunch and chocolate. When we are trying to reduce our caloric intact we make things that are crunchy. First it takes longer to chew crunchy things and second the mere action of crunching is very satisfying.
This is our new crunchy salad which is healthy and satisfying at the same time! It’s easy and be prepped ahead of time and you can use it as a basis for any protein you would like (we used out Harissa Honey Chicken)
Ingredients
2 heads of Romaine lettuce
4 Beets
1 Fennel Bulb
1 dozen red radishes
1 half white radish
1 pint cherry tomatoes
1 can of chick peas
Instructions
Roast the chickpeas in the oven at 425 degrees for 20 minutes after you have tossed them with olive oil, salt and a bit of chili powder.
Cut the romaine lettuce into fine strips. Peel the beets and cut into thin strips (yes - they are raw!) Slice the fennel into ribbons, cut the radishes in half, slice the white radish into thin strips and leave the cherry tomatoes whole (adds that ‘crunch factor to the tomatoes’).
Cut up your favorite protein - or just eat the salad as is. Add your favorite dressing and you have a healthy lunch or dinner
