Strawberry Beet Chia Parfait with Coconut Cashew Cream

This definitely falls into the Eat Pretty Category.  ALMOST too pretty to eat.  We went looking for some creative chia seed breakfast recipes after reading about the incredible health benefits of this superfood.  They have more calcium than milk, more antioxidants than blueberries and more Omega-3 than salmon.  What we found is amazingly delicious. It's a Strawberry-Beet Chia Parfait with Coconut Cashew Cream.  We added some goji berries to this one for some extra anti-oxidant power! 

Chia Pudding Ingredients 

  • 1/4 cup chia seeds

  • 3/4 cup coconut milk

  • 1/2 tsp cardamom

  • 1 tsp beet powder

  • 1 tbsp maple syrup


Mix in a bowl & soak overnight.  Easy right?

Cashew Cream Ingredients

  • 1/2 cup cashews soaked overnight

  • 1/3 cup coconut cream

  • 1/3 cup water

  • 3 tbsp maple syrup

  • 1 tsp vanilla powder


  • flaked coconut
  • fresh figs
  • freeze dried strawberry
  • Apple and passion fruit pulp
  • Goji Berries 


Blend in a high speed blender until smooth - add more water if needed and layer it your favourite jar with flaked coconut, line with figs & top with freeze dried strawberry, apple & passion fruit pulp.
