Tuna Lettuce Wraps

A low calories, nutritious, and filling lunch - for on the go or at your desk.  Eating healthy doesn't have to be time consuming and this meal is proof! You can also swap the tuna for egg, hummus, or chicken!  

Ingredients

Serves 2

  • 1 head of romaine lettuce

  • 2 cans of solid white tuna packed in water (6 ounce cans)

  • ¼ head of red cabbage

  • 2 medium size red tomatoes

  • 1 small red onion

  • ¼ cup of mayonnaise

  • 2 teaspoons of Sriracha (to taste)

Directions

  • Wash individual romaine lettuce leaves taking care not to tear them

  • Slice cabbage very thin into ribbons.

  • Cube tomatoes

  • Slice red onion into thin ribbons

  • Drain tuna

  • Place everything in a mixing bowl and add mayo and Sriracha sauce.  Add salt and pepper to taste.

To serve

Place a few tablespoons onto each leaf. (2 per person)  Serve!

TIP: If you want to take this with you for lunch at your desk pack the tuna salad in a container and wrap the lettuce leaves in a slightly damp paper towel and place in a ziplock bag.
