Voodles: Beets, Walnuts, and Goat Cheese

We want to keep eating foods that help our skin FEEL and LOOK its best! Spiralizers are one of our favorite ways to do that.  Voodles (vegetable noodles) are a great alternative to lettuce based salads! Here is a raw beetroot salad with walnut dressing and goat cheese!  Beets are one of the healthiest foods for you, and provide antioxidant, anti-inflammatory, and detoxification support to your whole body.  


  • 2 medium raw beets (I used pink and red)

  • 1 medium carrot

  • 4-5 slices of goat’s cheese or shaved Pecorino cheese


  • ¼ cup walnuts

  • ¼ cup extra-virgin olive oil

  • 2 tbsp lemon juice

  • 1 small garlic clove, finely diced or grated

  • ½ tsp maple syrup or raw honey

  • ¼ tsp sea salt

  • Pinch of pepper
