Parsley Salad with Feta & Ginger-Citrus Dressing

Parsley is one of our favorite ingredients to use a base for salads. We have always loved a good Lebanese Tabbouleh Salad (which is essentially a parsley salad which chopped tomatoes, cucumber and a grain) and that’s what inspired us make this one! We paired this light herb salad with a spicy Citrus Ginger dressing. It was the perfect exciting balance of flavours for a summer lunch and the addition of feta was perfect!

Ingredients

  • 3 large bunches of parsley

  • 1 four ounce piece of Feta cheese

  • 1 red pepper

  • 1 red onion

  • 1 pint of cherry tomatoes

  • 2 lemons 

  • 2 oranges 

  • Large piece of ginger 

  • 2 garlic cloves

  • ¼ cup of olive oil

  • 2 tablespoons of honey

  • 2 tablespoons of hot sauce 

  • Salt and pepper 

Instructions for salad

  1.  Wash and dry the parsley.  Roughly chop

  2. Crumble the feta cheese

  3. Thinly slice the red pepper and onion

  4. Cut the cherry tomatoes in half

  5. Place all ingredients in a large salad bowl

Instructions for Citrus Ginger dressing

  1.  Zest both the lemons and the oranges.  Juice both of the lemons and oranges and place in a jar with a lid.

  2. Grate the cloves of garlic with a zester and place in the jar (or crush with a garlic press)

  3. Peel the ginger, grate with a zester, and place in the jar.

  4. Add the olive oil, honey, and hot sauce to the jar. Cover and shake like crazy!

  5. Adjust with salt and pepper

Note: Dressing will stay fresh in the refrigerator for two weeks
