Fennel, Dill & Blood Orange Salad
This delightful dill and fennel salad makes for a unique side salad. It’s something a little different than your regular salad and the blood orange adds a beautiful pop of color to it. It’s a biter sweet and we pair it with our buttermilk dill dressing! Dill is surprisingly great for your skin and dill extract is now being used as a supplement, in cosmetics, and more. It’s high in Vitamin A, Carotenoids, and Vitamin B helping with the production of the protein elastin. Elastin is responsible for the skin’s elasticity and its breakdown can lead to age lines and wrinkles. Strengthening the protein elastin is key in terms of skin protection! That’s just one more reason we love this salad!
Ingredients
Dill
Blood Orange
Poached Chicken
Spinach
Arugula
Buttermilk Dressing
1/2 cup buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon white vinegar
1 bunch of dill finely chopped
1 clove garlic, pressed
Salt and freshly ground black pepper
Combine all the ingredients in a mason jar, screw on the lid and vigorously shake to combine.
