Baked Balsamic Cabbage

It’s official. Cabbage is the new Kale. It’s delicious, extremely healthy and budget friendly. We absolutely promise you’ll be shocked by how delicious this simple recipe is. It makes a great light dinner, side dish, or appetizer and it’s plant based.

Ingredients

1 head red cabbage

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1/2 teaspoon dijon mustard

1 clove garlic, minced

1/2 teaspoon maple syrup or honey

Himalayan salt and fresh ground pepper, to taste

Chopped basil for garnish

Note: You’ll need a silicone brush to apply the glaze.

Instructions

1. Preheat oven to 400F.

2. Cover a baking sheet with parchment paper.

3. Cut cabbage into thick slices around 1 inch thick. Place your cabbage slices onto prepared baking sheet.

5. In a mixing bowl, combine extra virgin olive oil, balsamic vinegar, mustard, garlic, and maple syrup.

6. Brush the cabbage with prepared balsamic glaze on both sides.

7. Roast for 20 to 25 minutes, or until crispy tender. Flipping half way.

8. Garnish with basil, pink Himalayan salt and pepper. ENJOY!
