Beef Lettuce Bowls

Beef Lettuce Burrito with Sriracha Mayonnaise, Avocado and Tomatoes

Ingredients

Serves 2

  • 1 pound of 80% ground beef

  • 3 garlic cloves

  • 1 medium onion

  • 1 medium jalapeno pepper

  • 1 medium head iceberg lettuce

  • 1 avocado

  • 1 bunch of cilantro

  • 1 lemon

  • ½ cup of mayonnaise

  • 2-3 tablespoons of Sriracha

  • 1 Big Boy Tomato

  • Parsley

  • Olive Oil

Directions

Put enough olive oil in the bottom of a medium frying pan to coat it.  Finely mince garlic and onions and saute until the garlic and onions are just translucent and fragrant.  Add the ground beef and break up with a wooden spoon.  Cook thoroughly and don’t worry if a few bits get a bit of a char - it only adds to the flavor.  Thinly slice the jalapeno pepper (removing seeds if you want less heat) and add to beef mixture and cook until soft.

Take the head of iceberg lettuce and smash on the counter-top root side down.  This will allow you to remove the core.  Carefully separate the leaves trying not to break them.

Cut the avocado in half and mash.  Finely dice cilantro and add to avocado.  Add the juice of ½ of the lemon.

 

Thinly slice tomato.

Combine the Mayonnaise and Sriracha and adjust according to how hot you like it. (we like ours very hot!)

To prepare:  

Take one whole lettuce leaf and place on plate.  Place 3 tablespoons of beef mixture in center of lettuce leaf.  Top with a tomato and a tablespoon of avocado and some of the Sriracha Mayonnaise.  Fold the lettuce leaf from one side to the middle, then the bottom to the middle and continue until an envelope is made (think burrito).
