Easy peasy Lemon Squeezy Loaf

Ingredients

Loaf

1 tbsp grated lemon zest

2 1/4 cups flour

1 1/2 tsp baking powder

3/4 tsp salt

1 1/4 cups granulated sugar

3/4 cups butter softened

3 large eggs

3/4 cups of milk 2%

Glaze

4 1/2 tsp lemon juice

2 tbsp granulated sugar

Instructions

  1. Whisk together flour, baking powder, salt and a portion of the sugar.

  2. Then add the softened butter and mix until you have a coarse crumb mixture.

  3. Stir in the lemon zest.

  4. In another bowl beat the eggs slightly then add the milk and mix until combined.

  5. Pour into the flour mixture and stir just until combined

  6. Pour into loaf pan and bake for approximately 1 hour and 15 minutes

  7. Let cool completely before drizzling with the lemon syrup.

  8. To make the glaze, combine the confectioners’ sugar and lemon juice in a small bowl. Stir until well combined. Add more confectioners’ sugar or lemon juice if necessary to make a thick but pourable glaze.
