Mango Cedar Plank Salmon
Cedar plank salmon is our absolute favorite way to cook this amazing fish. This time we soaked our cedar plank in lake water for 12 hours and made sure to buy organic salmon which has more nutrients and healthy fats in it. Once you know the steps, it’s easy to incorporate a cedar plank into your cooking routine. You can buy a pack of 12 on amazon for 25 CAD. We hope you enjoy this fantastic and healthy recipe. BASIC STEPS (Regardless of recipe)
Soak your unseasoned cedar plank in water for 12 hours (submerged).
Marinate your salmon however you choose.
Once the BBQ is hot (medium heat), place the cedar plank on the grill. Sprinkle the plank with course sea salt (optional) and leave it there for 3-4 minutes until it smells delicious and fragrant.
Place your marinated salmon directly on the hot cedar plank (skin side down). Optional: cut your salmon into filets before or after cooking.
Depending on the salmon size cook until fillet is barely firm to the touch and white juices appear all over the sides, 20 to 25 min (for thick piece as pictured). Turn barbecue off and keep lid closed for 5 min. Fish should now feel firm to the touch. To test if it’s ready insert a knife into the thickest part. Hold it there for a good ten seconds. Once removed it should be warm to the touch. If not, close lid and let rest another 5 min.

We like to start by massaging olive oil, salt, and pepper into the salmon. Then we covered it with a generous amount of grainy dijon mustard and maple syrup. Lastly, we placed some chopped mango, onions, and spicy chili flakes on it. All these flavors gave it a fantastic balance of sweet and spicy.
