Oven Sun Dried Tomatoes - A wonderful Holiday Gift
If you’re like us, the arrival of Fall will have you thinking about which homemade holiday gifts we are going to make this year. We started this tradition 35 years ago when the cost of the holidays got beyond our budget. The response from family and friends was so overwhelming that we continue it to this day. This year, thanks to a trip to the local farm, we bought 50 pounds of Roma tomatoes - the perfect tomato to make sun dried (or in our case oven dried) tomatoes with. The process is easy - just long. So get your sheet pans ready, fire up the oven, put the timer on and watch a few good movies!
Ingredients
Pounds and Pounds of Roma tomatoes.
Olive Oil
Instructions
Preheat the oven to 250 degrees. Line as many sheet pans as your oven will hold with parchment paper.
Cut the tomatoes lengthwise in half and place cut side up on the sheet pan.
Gently salt and place in the oven.
Set timer for eight hours (depending on the size of your tomatoes it may be less or more timer
Remove from the oven and allow them to completely cool.
Place in a jar and cover with olive oil.
This will stay in the pantry for at least six months. (If you place in the refrigerator the olive oil will solidify).
