ACE BLENDER TOMATO BASIL SOUP
As we've often said, we like to use January as an opportunity to reset our health and well being for the year. We recently purchased one of these Ace blenders which not only makes amazing smoothies but cooks soups as well. Our friend @susanemg shared this delicious soup which she made for her family and we're sharing the recipe because it was AMAZING. It's SO easy. Open cans, chop some vegetables, dump the ingredients in the blender, turn it on and walk away. The soup was delicious and we replaced the half and half with full fat Greek yogurt. In addition to the soup Susan made a cauliflower pizza which was the prefect weeknight winter dinner.

INGREDIENTS
1 can (14.5 ounce) San Marzano tomatoes 1 can (14.5 ounce) chicken broth
1 small onion, roughly chopped
1 stalk celery, roughly chopped
1 large carrot, roughly chopped
1 garlic clove, minced or pressed
2 tablespoons fresh basil
1 tablespoon tomato paste
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper 1/4 cup shredded Parmesan cheese
1/2 cup half and half
INSTRUCTIONS
Add tomatoes, chicken broth, onion, celery, garlic, basil, tomato paste, salt and pepper to the Ace blender jar. Put the lid on the jar. Select the soup 2 setting.
When the cook time ends, open the lid and add Parmesan cheese and half and half. Replace lid and pulse twice to combine.
This is definitely one of the best soup recipes on the planet! It’s thick and creamy but doesn’t actually require cream and it has SUCH a unique array of rich spices and flavors like curry, coconut and tumeric. Curry and coconut always go well together but we’ve never had such a tasty cauliflower soup before and it was ridiculously easy to make.
