Pumpkin Ginger Soup With Pistachios

Can't go wrong with this Triple S (Soup, Salad, and Sandwich) lunch!  Filled with healthy approved #FaceFood nutrients, today's meal quick fire recipe is simple and delicious.  You can mix and match it with any salad, soup or sandwich, but the we've included this our the home made soup recipe below.  We especially love this lunch because we get a little bit of everything on one plate (Tapas style!) 

Today's Lunch Menu

  • Pumpkin ginger soup with pistachios

  • A simple field green salad

  • Toasted baguette with Avocado

Pumpkin Ginger Soup Recipe:  

  • 6 cups of vegetable stock (Ours was homemade from the night before!)

  • 15 oz can of Pumpkin Puree

  • 1 tbsp of grated ginger

  • 1/2 tsp of cayenne pepper

  • A dash of salt and pepper

  • Pistachios

Combine stock with all the ingredients and keep on a low boil for 15 minutes! Sprinkle some toasted pistachios on top.
