Bake-less Coconut Chia Seed Energy Balls

Sometimes you just need a quick bite to keep you going throughout the day and these little energy balls are so tasty they could be confused with a dessert. They’re super healthy, packed with #FaceFood vitamins, and you can make them in under 5 minutes (without an oven). This recipe will give you about 12 bites (depending how large they are). Note: if you find they are too mushy, add more rolled oats. They should hold together but still feel very mushy.

If you don’t want to make the butter, then just soak your dates in hot water to soften (portions below) and add to your blender.

Yields: 12-15 bites

Ingredients

1 1/2 cups rolled oats

4 tbsp of date butter - or 1 cup of chopped dates

1/2 cup of peanut butter

2 tbsp of coconut oil

3 tbsp of chia seeds

3 tbsp of pumpkin seeds

1/4 cup of chopped pecans

1/4 cup of unsweetened shredded coconut

2 tablespoons of maple syrup or Manuka honey

Instructions

  1.  Soak the oatmeal in hot water to soften. Strain any remaining water out and place your oatmeal in a medium sized bowl or in your food processor. Add the remaining ingredients and combine everything by pulsing your blender/food processor for a few short bursts. You can also easily mush everything together with your hands.

  2. Prepare a baking sheet with a piece of parchment paper on it. Set aside.

  3. Once your mixture is well combined, use your hands to shape the mixture into 1 inch balls. Place them side by side on the parchment paper lined baking tray. Once done, place the tray in freezer (if you want them sooner) or fridge for a couple of hours. Make sure it’s flat.

  4. Once they’re chilled they won’t stick together and you can put them in a freezer bag together to store or in a mason jar in the fridge for ready to go snacks. In the fridge they’ll last about 3 weeks (if you can resist) and in the freezer, you’re looking at about 3 months.

  5. Note: You should avoid leaving them out on the counter for too long because the coconut oil will melt and they will become quite mushy / stick together. They won’t fall apart and are still delicious after a few hours on the counter - but fridge is preferable!
