Beetroot Risotto at Emporium Market: A Taste of Explora Journeys: An Ocean State of Mind aboard Explora Journeys

The goal of the new ultra-luxury line - Explora Journeys by MSC - is for their guests to experience what they have termed #OceanStateOfMind. What does that mean? For me, having now spent an amazing 13 days on the ship (with 20 more days to go!) it has been about a slowing down and a reset of my daily life. One of the many components of this mindset is healthy and nourishing food prepared with respect to the ingredients.

Last night I had dinner at the Emporiium Market. I had the most amazing Beetroot Risotto I have ever had. It was perfection. Cooked perfectly, with a hint of the beetroot (heart healthy!), with dollops of pesto and a combination of goat and marscapone cheese and finished with a generous sprinkling of Parmesan cheese. Paired with a wonderful Cabernet wine from one of the daily offerings and I was in food heaven. Now if only I could get that recipe!
