DARK ARK CHOCOLATE COCONUT PROTEIN BARS

INGREDIENTS (Makes 8 bars)
For the bars:
¾ cup unsweetened shredded coconut
¼ cup coconut flour
2 scoops vanilla or coconut protein powder (unsweetened)
2 tbsp monk fruit or erythritol-based sweetener
¼ cup full-fat canned coconut milk
1 tsp vanilla extract
Pinch of salt
For the chocolate coating:
¾ cup dark chocolate chips (70–85% cacao)
1 tsp coconut oil
INSTRUCTIONS
1. Mix the base:
In a bowl, combine shredded coconut, coconut flour, protein powder, sweetener, and salt. Stir in coconut milk and vanilla until a thick dough forms.
2. Form the bars:
Press mixture into a parchment-lined loaf pan or shape into 8 small bars by hand. Freeze for 20 minutes.
3. Melt the chocolate:
Use a double boiler or microwave to melt the chocolate with coconut oil until smooth.
4. Coat + chill:
Dip bars or drizzle chocolate on top. Return to freezer 15–20 minutes until set.
5. Store smart:
Keep chilled for up to 7 days in the fridge or freeze individually wrapped bars for grab-and-go snacks.
