Peaches and Mint Signature Summer Salad
To kick off summer 2020, we’ve created a tasty signature summer salad featuring grilled peaches and mint! It’s PACKED with skin friendly nutrients, energy, and summer flavors! With grilled peaches and a hint of mint this is one special salad! Luxurious ingredients like pecans and feta provide protein, radishes, beets and cabbage give it satisfying crunch, and it’s all tossed in a white wine vinaigrette that keeps it all feeling fresh and light. The warm weather is finally here and we are looking forward to an abundance of fresh produce. There is nothing quite like a tomato kissed by sunshine, berries bursting with flavor or tender greens just picked from the garden.
INGREDIENTS
Serves 3-5
Salad
1 large bunch of arugula
1 bunch of curly kale
1 bunch of mint
1 bunch of radishes thinly sliced
1 cup of red cabbage chopped
1 small red onion sliced
3 small raw beets sliced thinly (yellow or red)
3 peaches (or you can substitute another fruit)
1 cup of chopped pecans
1 cup of feta cheese or blue cheese (this depends on your personal taste)
White Wine Vinaigrette
1/4 cup extra virgin olive oil
1/4 cup white wine vinegar
1/2 tsp dijon
2 tbsp maple syrup or honey
Salt and Pepper
Optional: crushed mint
Instructions
Wash and prep all your veggies so they are ready to assemble.
Grill your peaches by searing on a hot grill for 30 second on each side. Use a non-stick spray. You can use a BBQ or a panini grill. Quick tip: Use peaches that aren’t ripe yet (a bit on the firmer side) and they’ll be easier to grill. They sweeten up when you grill them so they’ll taste great!
Assemble your salad by placing each ingredient nicely on top of your lettuce.
Make your dressing by putting all ingredients in a mason jar and shaking until mixed. Store in the fridge for up to two weeks. You can add some chopped mint if you like!
When ready to serve, toss it with desired amount of dressing and enjoy!
