Clementine Creamsicle Pops

These creamsicle pops are a tasty treat that’s super healthy and makes for a great summer snack or on the go breakfast! Made with greek yogurt and fruit - it’s high in protein and vitamin C - so you can enjoy these guilt free! Takes no time to prepare and requires only a set of popsicle molds which you will find yourself using over and over again!

Ingredients

1 1/2 cups of plain greek yogurt

1/2 a cup of freshly squeeze clementine juice (or orange juice)

1 tsp of vanilla extract

2-3 drops of orange extract

1 tbsp of maple syrup

Serves 4-6 (depending on size of your popsicle molds)

Ingredients

  • 1 1/2 cups of plain greek yogurt

  • 1/2 a cup of freshly squeeze clementine juice (or orange juice)

  • 1 tsp of vanilla extract

  • 2-3 drops of orange extract

  • 1 tbsp of maple syrup

Instructions

  1. Hand squeeze 5-6 clementines to get the juice. Remove any seeds if needed as you go. Optional: you can also use the juice from a few oranges or even orange juice from concentrate- which is easier. We prefer clementines for flavor but they are both delicious!

  2. Add yogurt, vanilla and orange extract to your juice and whisk together until combined. If you blend your clementines you’ll wind up with a lot of skin - so avoid!

  3. Use a ladle or a funnel to fill each popsicle mold and then insert the handles (making sure to leave enough room to hold the stick).

  4. Place in the freezer - flat. Allow to freeze completely overnight or for at least 5 hours before enjoying!
