Rainbow Salad with Buttermilk Dressing

This is one of our favorite summer salads because it just so colorful and vibrant! Not only is it pretty, it’s packed with a variety of antioxidants, vitamins, and skin friendly nutrients! If you want to make this into a more substantial summer meal you can add grilled shrimp, steak or chicken. Otherwise, it makes a perfect side dish!

Ingredients

1 pint cherry tomatoes

1 yellow pepper

½ head broccoli

¼ head red cabbage

2 large carrots

1 avocado

1 pint of strawberries

1 mango

1 bunch of baby arugula

1 bunch of mini kale

Instructions

  1. Halve the cherry tomatoes

  2. Slice the yellow pepper into think strips

  3. Cut the broccoli into florets

  4. Thinly slice the red cabbage

  5. Wash and using a peeler strip the carrot

  6. Slice the avocado into wedges

  7. Wash, hull and slice the strawberries into quarter

  8. Wash and dry both the arugula and kale

  9. Assemble the salad into two bowls and pour dressing over the top

Buttermilk Dressing

  • 1/2 cup buttermilk

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 1 teaspoon white vinegar

  • 1 bunch of dill finely chopped

  • 1 clove garlic, pressed

  • Salt and freshly ground black pepper

Combine all the ingredients in a mason jar, screw on the lid and vigorously shake to combine.
